Healing Homemade Chicken Noodle Soup

It's only November and I've already made this twice for loved ones feeling under the weather. It is chock full of true, natural healing; bone broth and all! This soup also makes the best freezer meal gift for postartum blessings. It's not an exact science, just spend some time making this from your heart for your family.

Healing Chicken Noodle Soup

  • Whole chicken or split chicken or breasts and thighs (whatever you prefer/can find, just make sure it's boned for collagen)
  • 1 onion, quartered
  • 4 stalks of celery, diced into hefty chunks, use the leafy part too!
  • 5 carrots, diced similar to celery
  • Several slices of fresh ginger root or 1/2 tbsp dried ginger
  • Several slices of fresh turmeric root or 1/2 tbsp dried turmeric
  • 2 bay leaves
  • 1 tbsp fresh ground pepper
  • 1 tbsp sea/himalayan salt (more is never bad as we need these electrolytes and hydration)
  • 1 bunch fresh rosemary & thyme, or 1 tsp of each dried
  • Egg noddles (I prefer Bionature brand. Don't ruin the natural goodness of the soup with noddles full of junk)
  • Lemon squeezed into bowl if desired

Add chicken to slow cooker or large stock pot/dutch oven on stove. Cover with water and cook for 4 hours on high/8 hours on low in slow cooker. On stove, bring to a boil then simmer for an hour or until meat begins to fall off bones.

Remove cooked chicken, cool, then debone, and chop/shred. Set aside.

While chicken is cooling, add all the veggies, herbs, and seasonings to broth. Cook until carrots, celery, and onions are tender. Add chicken back to soup.

Add egg noodles and cook until they are done. Serve into bowls and squeeze in some lemon juice if desired.

**Since this makes SO much soup, I like to portion out half of the soup into another pot then add half of the noodles to one of the pots eat immediately. Let the other half cool then store to freeze. Heat up to eat later and add the egg noddles then. This will keep the egg noodles from getting mushy while frozen and reheated. When preparing for a post-partum/sick gift, I do not not add the noodles but include the bag with the gift of soup.
